Since my foot surgery last week, my interaction with the kitchen has been limited to scrolling through countless pictures from other food blogs on Tastespotting.com. I decided to finally get up and make something that seemed like it would be easy to put together while on crutches.
I have recently developed a love for overnight oats, and so I decided I would try a new recipe. I found this recipe for “Overnight Matcha Vanilla Oatmeal” on the blog Thirsty for Tea.
Here are the ingredients:
1/2 cup oats, 1/2 cup Greek yogurt, 1/2 cup almond milk, 1 Tbsp. honey. 1 tsp. matcha powder, 1/2 tsp. vanilla extract, and some diced fruit
My mom picked up these beautiful local strawberries, and I thought they would go well with the matcha flavor.
First I mixed together the oats and the milk using a funnel to make everything easier.
Next, I added the honey, vanilla and matcha. I used real high quality matcha, which is also the same that I use for my matcha panna cotta recipe.
Then I added the yogurt and mixed it all together.
The beautiful color of the green matcha really stands out next to the pure white yogurt.
Finally, I put the whole thing into the fridge for breakfast.

Truly, it is beautiful. Taste-wise I must admit it was not my absolute favorite. It may be because I am more used to an overnight oats recipe that does not use yogurt as part of the mix (my usual recipe is just oats, almond milk, cinnamon, and maple syrup). It was still good, and I would recommend it as a refreshing version of the traditional cooked oatmeal. I did enjoy the matcha flavor, but I think next time I will try this recipe using just almond milk and skip the Greek yogurt. Don’t get me wrong, I love Greek yogurt, especially with berries and granola on top, but for some reason I just think I would like this better without the extra tartness that the yogurt brings to the table.
