Week Two in our month of Christmas blogging features a recipe inspired by a Christmas movie. I chose to base my creation of a gingerbread cupcake with maple frosting off of my mom’s favorite – Elf.

I think almost all of Will Ferrell’s lines in this movie make me crack up just by thinking about them.

Since I wasn’t super crazy about the idea of spaghetti and syrup . . . I incorporated the syrup into the frosting for the cupcakes.
I found that the taste/spice mix for these cupcakes was just right. However, I did think that the cupcakes could have been more moist. I should have known from the fact that the batter pre-baked was much firmer than some of my other cupcakes. Also, I think the frosting needed some tweaking, as the final product. After chilling in the fridge it did firm up a bit, but it could use some more cream cheese in the mix to counter the maple syrup.
Nevertheless, these were a delightful treat. A little closer to gingerbread, but still very enjoyable, especially with a cup of hot coffee. Here they sit on my cupcake carrier, ready for me to bring them to share at work!
