Breakfast during the week can get a bit dull. As great as oatmeal can be with all the fixings, and as quick as overnight chia pudding is, I like to try to make something fun at least once during the week.
Banana pancakes are definitely more time consuming, but they are well worth the effort.
The recipe that I use is super simple: 2 eggs, 1 banana, 1 Tbs almond flour, 1 Tbs coconut flour, pinch of salt, drop of vanilla extract. I just mix it in my bullet. Then heat some coconut oil over medium heat, and proceed as you usually would with making pancakes.
As for the toppings, I usually use fruit with Greek yogurt, but this time I had some ricotta cheese that needed to be used. So I ended up with a ricotta, raspberry, pepita and honey topping mixture, which was SO good.
Really any kind of fruit topping will work. You can add honey, peanut or almond butter, even just maple syrup. I like to add some kind of crunch too, like nuts, seeds or granola. It can be pretty healthy, and you get a great boost of protein and to start off your morning.
