Easter!!!! This year I spent Easter with Mike’s family in Rochester. I happened to wake up super early, so I decided to be productive and whip up something for brunch….which turned into coffee cake, scones, and mini frittatas.
Even though I may have cooked the scones at the wrong temperature for a bit first before I realized it …. they still turned out great!
For the frittatas, I sautéed pancetta with peas and green onions. Once combined with the egg mix in a muffin tin, I dolloped some ricotta cheese on top and baked them at 350 degrees for about 25 minutes (if I remember correctly 🙂 ).
With some fresh basil ribbons and cracked black pepper….these were a big hit and I will definitely be making them again!
