Floating around the internet is this very popular recipe for making a chocolate chip cookie in a mug in the microwave in less than 5 minutes. Last year when Mike and I were abroad, this was our go-to dessert when we just needed a little something sweet after dinner to carry us through our studying. The recipe is extremely simple, and I recommend you give it a try!
First, in a mug (or ramekin as I used here) melt 1 Tbs. butter.
Second, add 1 Tbs. of sugar and 1 Tbs. brown sugar. Mix it all together (I think a fork is the easiest mixing tool for this recipe).
Sixth, microwave for 40-60 seconds. I find that if you use a shallow mug/ramekin you will need less time. I microwaved this one for 45 seconds and it was perfect. You will know it is done because the top is firm and a bit springy when you touch it.
