Once again the holidays this year arrived in a whirlwind blur. I can’t believe it’s already January 2, 2015!!!
In any event, it seems I have some blog posting to catch up on. As such, to follow is a slew of posts reflecting all the deliciousness we consumed over the 2014 holiday season.
These beautiful eggnog cupcakes were a delight, and yet a challenge, to make.
Everything with the batter was fine, and they came out of the oven with a beautiful golden brown dome.
Then it came time to make the frosting. Little did I know, we were out of powdered sugar. . . What to do??? Powdered sugar is one of the KEY ingredients in a successful frosting!!!!
My last minute solution: eggnog-whipped cream with a eggnog glaze swirl for some extra sweetness.
And, of course, a dash of nutmeg to brighten the cupcakes even more.
So the moral of the story: make sure you have all the necessary ingredients before you start baking . . . but, if not, improvise! Who knows, maybe your more-creative final product will surprise you.
